Pasta with pesto all Trapanese(Sicilian pesto)
Ingredient
s 1 lb pasta
1 lb ripe tomatoes
1 0r 2 cloves garlic
10 basil leaves
4oz of grated pecorino cheese, or parmesan
1 0z of dry, chopped, skinned almonds
salt and pepper
olive oil
Pound the garlic in a mortar together with the basil, almonds and a little olive oil and the grated pecorino. Skin the tomatoes, discard their seeds, chop roughly and add the garlic and basil. Mix well and leave to rest. Cook pasta in plenty of salted water, drain and turn into the sauce bowl. Mix well and serve.
